A twist on the Bee's Knees featuring the ultimate sunny day gin Tofino Distillery Lavender Mint Gin

- 2 oz Lavender Mint Gin
- 1 oz lemon juice
- 3/4 oz honey syrup
- 3 oz soda water
- Shake Lavender Mint Gin, lemon juice, and honey syrup over ice
- Pour into collins glass over ice
- Top with soda
- (optional) Garnish with lemon discs or sprig of lavender
- To serve "up" as a martini, skip the soda water and serve in chilled martini glass
