Cucumber Syrup
featured in out Red Eyed Medusa cocktail
INGREDIENTS:
- 1 Cup Sugar
- 1 Cup Water
- 1 English Cucumber
INSTRUCTIONS:
- Combine sugar and water in a pot.
- Bring to a boil only until sugar is dissolved.
- Cool syrup completely.
- In blender, combine chopped english cucumber (skins on) with simple syrup.
- Blend on highest setting for 1 minute.
- Strain mixture through fine mesh strainer - pushing on solids to capture all liquid.
- Store covered in fridge for up to 1 week.
