Cucumber Syrup

  • 1 Cup Sugar
  • 1 Cup Water
  • 1 English Cucumber


  • Combine sugar and water in a pot.
  • Bring to a boil only until sugar is dissolved.
  • Cool syrup completely.
  • In blender, combine chopped english cucumber (skins on) with simple syrup.
  • Blend on highest setting for 1 minute.
  • Strain mixture through fine mesh strainer - pushing on solids to capture all liquid.
  • Store covered in fridge for up to 1 week.
